Almost 800 dollars worth of cheese, frozen

The truck was loaded backwards. Perishables in the freezer, frozen in the cooler. The wall wasn’t closed properly so most of the frozen material was ok.

Standard procedure is the food supplier replaces all this but lets the restaurant keep the messed up product. OP and his work friends have $800 of cheese to take home if they're okay with thawing it out

As someone who worked logistics, the 'wall wasn’t closed properly' is the only thing that saved the driver from a $3,000 insurance claim. $800 of cheese is painful, but a whole truck of thawed frozen goods would have been a career-ender

The driver didn’t load the truck. He was the one that discovered what happened and immediately told us when he came in.

People keep saying it’s fine as if it’s fine for a halfway decent grocery store or restaurant to sell. Like I have plenty of months old stuff frozen in my freezer but I’d not be happy to get months old frozen stuff at a restaurant.

I freeze cheese all the time. Hard cheese like cheddar gets a bit crumbly, soft like cream cheese may separate but I still use it.

That’s cool. You can do whatever you want with your cheese. You paid for it. Unfortunately, freezing cheese and then thawing it changes the texture, quality and shelf life of the product. I sell cheese for retail. I can’t afford to sell poor quality cheeses.

Frozen cheese is fine it just needs to defrost in the cooler before being put in the floor first at least 24 hours. Would hate to have to respond to a customer complaint about their spreadable Aloutte isn’t spreadable and its a block.
